Aims and Scope

FSAMR publishes innovative theoretical and applied research that demonstrates clear originality in approach, methodology, or practical application. Submissions must explicitly highlight their scientific, technological, or industrial significance.

The journal welcomes contributions in the following areas:

Food Science and Technology

  • Food processing and preservation
  • Food quality assessment
  • Food safety and risk analysis
  • Product development and innovation

Food Chemistry and Biochemistry

  • Chemical composition of foods
  • Bioactive compounds and functional ingredients
  • Molecular interactions in food systems
  • Analytical methods in food chemistry

Applied Microbiology

  • Food microbiology
  • Fermentation science
  • Microbial safety and quality
  • Industrial microbiology applications

Nutrition and Functional Foods

  • Nutritional evaluation of foods
  • Functional and fortified foods
  • Dietary components and health relationships
  • Nutraceutical research

Manuscripts involving human clinical trials are outside the journal’s scope and will not be considered.

The journal particularly welcomes interdisciplinary studies that advance knowledge in food quality, safety, functionality, and microbial applications.

All articles are published in English.


Types of Submissions

  • Research Articles (up to 6,000 words)
  • Review Articles (up to 7,000 words)
  • Short Communications / Perspectives (up to 3,000 words)

Word limits exclude references, tables, and figure captions.


Manuscript Preparation

  • File format: Microsoft Word or LaTeX
  • Abstract: Maximum 200 words
  • Keywords: Up to 5 keywords
  • References: FSAMR follows the APA (American Psychological Association) author–date citation style. In-text citations should include the author’s surname and year of publication. The reference list must be arranged alphabetically by the first author’s surname and formatted consistently according to APA guidelines.
  • Tables and Figures: Maximum 5 tables and 5 figures unless justified

Manuscripts must be written in clear, professional English.


Submission Requirements

  • Manuscripts must be submitted via the journal’s Online Journal System (OJS).
  • One corresponding author must be designated.
  • A cover letter must confirm that:
    • the work is original,
    • it is not under consideration elsewhere, and
    • all authors approve the submission.

Suggested Reviewers

  • Must have relevant subject expertise
  • Must have no conflict of interest
  • Should preferably have institutional email addresses

The editors are not obligated to use the suggested reviewers.


Ethics and Research Integrity

  • Human studies must include informed consent and ethics committee approval.
  • Animal studies must follow institutional and national ethical guidelines.
  • An ethics statement must be included in the manuscript where applicable.

All submissions are screened for plagiarism and research misconduct prior to peer review.


Data Availability

FSAMR supports open and reproducible research.

Authors are strongly encouraged to deposit supporting data in appropriate public repositories.

All manuscripts must include a Data Availability Statement indicating:

  • where the data can be accessed, or
  • why data are not publicly available.

Authorship and Contributions

Authorship must reflect substantial scholarly contribution.

FSAMR follows the CRediT (Contributor Roles Taxonomy). Each submission must include an Author Contributions statement.

All authors must approve the final manuscript.

ORCID iDs are strongly recommended for all authors.


Preprints Policy

FSAMR accepts manuscripts that have previously been posted on recognized preprint servers. Authors must disclose any preprint posting at submission.


After Acceptance

  • Page proofs must be reviewed and returned within 2 working days.
  • Articles are published online first and later assigned to a journal issue.
  • Minor editorial corrections may be made to ensure clarity and consistency.
